Wedding Cake


I will be honest. Wedding cakes scare the #### out of me! This is a couple's special day (actually lets face it, this is a WOMAN'S special day), and they (SHE) wants it to be perfect. The last thing I would want is for the bride to be disapointed by the cake.


So I had an opportunity to make a wedding cake for a couple who had already gotten married and their family was having a small family reception with about 50 guests. They wanted a small two tiered cake with a fall theme. I made an amaretto cake with a white creamy frosting for the bottom tier and the top tier was an Italian cream cake with cream cheese frosting.


I was very pleased with the way it turned out. I hope the couple is happy as I was with the cake.

Crescent Delight


I was visiting a friend of mine the other night and came up with a yummy dessert. All of the ingredients were in their pantry. I did not go to the store for a single item. I hope you all will make it and enjoy.


Crescent Delight

Refrigerated Crescent Rolls (12 oz)
1/4 cup Hazlenut Spread
1 Tbs Dark Brown Sugar
1/4 cup Honey Spread (regular honey will do just as good)
1 Tbs Bailey's Liquor
Vanilla Ice Cream
Strawberries or other favorite fruit

Mix hazlenut spread and brown sugar. Spread the hazlenut mixture along rolled out crescent rolls. Roll them up and bake as stated on package.

Meanwhile, heat the honey and Bailey's until blended. Drizzle on top of crescents and serve with ice cream and berries. It's so good and so easy!!!

It's been a while....

My apologies for waiting so long to write a post. Life has been crazy. Between traveling to Mexico not just once, but twice this summer, going to the river and chaperoning a culinary camp, my life has been pretty busy! However, I have still found time to bake up some yummy goodness. Here are three different cakes that I prepared this summer:

Cake 1:
One of my good friends from church is having a baby girl and her future sister-n-law wanted to throw her a baby shower. I offered to make the cake for the event, and, in the end, ended up making cupcakes and a diaper cake. (May I say that diaper cakes are one of the easiest things to make and it provides a wonderful centerpiece at the shower.) My friend had told me that she was tired of PINK so I went with purple and lime green for the diaper cake. I had made strawberry cupcakes, with the batter being very similar to an angel food cake. The icing was very light; it was more like a whipped icing with fresh strawberries. Surprisingly, even though they were strawberry cupcakes, they didn't have a pink tint. I tied a lime green, lace ribbon around half of the cupcakes, and the other half I sprinkled edible, purple specks on top. Hopefully, I will have pictures to share soon. (My husband had the camera so I couldn't take any pictures.)

Cake 2:
I have three of the best brothers any sister could ask for. Andrew is 21 and going into his fourth year at Mississippi State. He has the most incredible voice I have ever heard from a man, and because of it he got a scholarship to sing in the Chamber Choir at MSU. He has already been accepted into the Veterinary Program at MSU and I expect nothing, but great things from him. Did I mention that he has the most beautiful red, wavy hair? :)

Jeratt is my middle brother who has just turned 16 and has a hot, red Mustang waiting on him. (He has to drive my dad's Toyota Avalon for six months before he can get his Mustang.) He is a great soccer player and wants to attend LSU to study Zoology. (I am starting to think that my parents waited to give all of the smart genes to my brothers. :)) Interestingly enough, he loves to bake as well. He and my step mom made a 3D Sponge Bob cake and it was amazing!

Last, but not least, there is Jamison who is 14, but stands almost six feet tall. He is my baby, and he is my god child. He has started his first year in high school, and I will be honest I cried like a baby on his first day at North Side High School. He also plays soccer and is really good. He is my husband's shadow; I like to call him Lil' Bubba since I call my husband Bubba. He has started hunting with Bradley so he stays at our house quite a bit during the hunting seasons. Sometimes I feel like he's my child instead of my brother. :)

With all of that being said, one weekend my husband and I were at the river with my dad, step mom, Jeratt and Jamison. After a long day out on the river and a delicious dinner, we were watching Bobby Flay's Cook Off on Food Network. The challenge was a coconut cake; my mouth was watering as I was watching it. My two youngest brothers and I decided to make Bobby Flay's coconut cake one weekend. (Andrew, who is also a really good cook, is working at the Vet Pharmacy at MSU so he couldn't join us. I know he would have wanted to though.)

We printed the recipe off of the website and it was THREE pages long. We used three vanilla beans, some coconut rum and a little bit of coconut. I have to be honest, I wasn't a big fan. I felt that it was more like a vanilla cake than a coconut cake. I was talking to my best friend about it and she said that she has printed and made some of his dishes, and she noticed that there were a couple of things missing in the online recipes she printed. So I am going to say that something was wrong with the online recipe. :) I love me some Bobby Flay and I know he doesn't make anything bad. I might give it another try when it's just me baking.

Cake 3:
Earlier I mentioned that a good friend of mine was having a baby and I am throwing her a baby shower. I always like to make different kinds of cakes. So I was doing a test run as to what flavor I wanted to make, and had a thought to mix raspberry and chocolate. I made a basic white cake, but instead of putting vanilla extract I added raspberry liquor. I put a raspberry filling on one cake layer and then put a chocolate frosting on the second layer. For the icing, I made a cream cheese frosting with the raspberry liquor instead of vanilla extract. It was sooooo yummy! I think I might leave out the raspberry liquor in the frosting, and crush some fresh raspberries into the chocolate frosting or the actual batter to give it more raspberry flavor. I am going to make two large sheet cakes and cut them to where they are in the shape of a bassinet, and cover it with butterflies made from gum paste. Will post pictures once finished!!!

What a Great Day!!!

Bradley's birthday was a success. Friends and family came out and celebrated with us. It rained a bit, but it was very refreshing on a hot summer day!

My mango salsa turned out wonderful. All that was in it was mango, pineapple, fresh squeezed oranges, lime zest and cilantro. YUMMY!!!!

Bradley ate two pieces of the strawberry cake so I'm guessing he loved it. Of course, he also ate two pieces of the angel food cake with fresh crushed strawberries.

I am finally going to start cooking from the big book, The Professional Pastry Chef. Tomorrow I am going to attempt to make almond paste and an apricot glaze. Wish me luck!

Chicken Pot Pie

Ingredients:
1 cup cooked chicken
All you favorite frozen vegetables, about a cup of each, cooked (carrots, peas, green beans, corn, etc)
2 Shallots, chopped
2 garlic cloves, minced
2 T unsalted butter
1 cup Heavy Whipping cream
1 cup chicken broth
1 10 3/4 oz can Cream of Chicken soup
16 - 18 frozen mini buttermilk biscuits (you can also use a tube of Refrigerated biscuits, cut into fours)
Salt & Pepper to taste

Preheat oven to 350 degrees. Saute the shallots and garlic in the butter until soft. Meanwhile, in a large sauce pan, combine cream, broth, and soup and cook on Medium heat until blended. Add vegetables, chicken, shallots and salt and pepper to your liking. Once combined, pour into a 2.5 quart baking dish. Bake at 350 for 25 minutes or until bubbly.

Place the biscuits on top and bake according to the biscuit package (for the minis, about 22 minutes/ for refrigerated biscuits about 15 minutes. The biscuits should be golden brown on top.

Bradley's Birthday


What a wonderful celebration we're going to have on Saturday. My husband turned 29 on Thursday and, of course it's always special when someone has a birthday, but this one is extra special. It's the first time my husband has been home for his birthday in over seven years!!!!! Like I said in my profile, my husband is active duty serviceman in the National Guard so he is always travelling, whether it's to Iraq or North Dakota. So, in order to celebrate the occassion, I wanted to throw him a BIG birthday party with all of our close family and friends (30 people so far).

Here's what's on the menu:

Homemade Burgers / Hot Dogs
"Bubba's Baked Beans" (They are Bush's beans with extra brown sugar, barbecue sauce and cooked sausage - my husband loves them so I named them after him)
Ramaker Pasta Salad
Mango & Pineapple Salad (my own concoction)

Now you can't have a birthday party without a birthday cake, right? Well there is one BIG problem....my husband doesn't like cakes, pies, cookies or candies (weird, huh). However, he does like strawberries. I have discovered that he likes angel food cake with fresh strawberries. I even made him a strawberry cake with fresh strawberries in the batter and icing and he loved it!! Unfortunately, I couldn't find that recipe so I scowered the internet to find the perfect one. Hopefully, it will turn out okay. Will post on it later.

For his birthday dinner, I made his favorite, Chicken Pot Pie. Now, he likes a certain recipe and I like another recipe. So what did I do? I combined and mixed and omitted and made up my own recipe for chicken pot pie. How did it turn out?????? MELT IN YOUR MOUTH, HEAVENLY I was so proud. It was the first time I made up my own recipe. Sure, I make my own marinades, but this is different. It was a full blown meal where I didn't use a single recipe to go by. Chocolate Mint Thumbrints


WOW!! These were a ton of fun. Made very similar to the cherry teacakes. Nice and colorful for fun decorating a cookie tray, maybe setting them up to look like a christmas tree and using the cherry teacakes to be the ornaments. How fun would that be!!
